Hash You Wish

One of my earliest childhood memories is of my mother eating corned beef hash. She bought it in a can, and heated it up on the stove. It looked and smelled hideous. She loved it and was happy that none of the rest of the family would go near it. More for her, she said.

Needless to say, I was a bit skeptical about making this recipe. However, I had the hope that “from scratch” would be much better than out of a can. This recipe did not disappoint. It was delicious. As I mentioned when I made the Fire Swamp Boiled Beef, Jimmy is not a fan of corned beef. He summoned up his courage, fueled by the smell of bacon and onions and garlic. He liked it!

The recipe tops the hash with fried eggs. I’m not a fan of runny yolks. I cooked Jimmy’s eggs over medium and gave mine another minute or two in the pan.

This breakfast hit the spot on a cold and dreary winter morning. And there are leftovers – the recipe makes four servings. We will eat this again tomorrow.

Now that I’ve made five of the recipes, maybe I should establish a rating system? Factors in the system will include not only taste, but ease and complexity of the recipe. On a scale of 1 to 10, I will rate this an 8.
