This seemed like a good recipe to try this weekend. Balls of fried macaroni and cheese! I’ve had similar mac-n-cheese bites at restaurants, so I thought I’d try it out. Well, the macaroni and cheese was delicious. However, I had a tough time forming the balls. I gave up. I still have the leftovers in the fridge, so I might try again in a day or two.
For my other news, I’ve started on the GOLO plan to lose weight. Very few of the recipes in the cookbook would be acceptable on this plan. However, I will try to persist in the cookbook project. If I have one meal a week off the plan, I don’t think it will make a big difference in the end. Time will tell.
